Instant Pot Cooking Class with Tiersa!

This class with Tiersa will take you from start to finish on a great meal for lunch or dinner! Great for a whole family or for meal prepping! Enjoy!

Smokey Honey Cilantro Chicken
Ingredients
1 cup salsa verde
½ a large white onion, diced (I used 170 g)
2 tbs honey
1 tbs liquid smoke (sold at grocery stores near barbecue sauce.)
5 cloves garlic (I always use the frozen dorot cubes.)
2 tsp chili powder
1.5 tsp kosher salt
1 tsp dried oregano
1 tsp cumin
½ tsp paprika
2–3 pounds thawed or fresh chicken breasts or tenderloins (I always prefer tenderloins.)

Quick and Light Crispy Tostada Pizza
1 Joseph’s Pita (You can find them at most Walmarts now, and always on Amazon.)
1 tbs (15 g) Trader Joes Chipotle Black Bean Dip (Or sub 1 tbs refried beans mixed with 1 tbs favorite jarred salsa- the macros will be close enough!)
10 g (Shy of a tbs) Trader Joe’s Light shredded three cheese blend
60 g leftover instant pot or slow cooker carnitas (you can use it straight out of instant pot or quickly pan-fry it to make it crispy)
Big handful of finely chopped romain or iceberg lettuce
25 g pico (I quickly whip up my own but whatever you like will do! The macros are all so so close.)
15 grams sliced avocado or 1 tbs guacamole
1 tbs (15 g) fat free sour cream or greek yogurt
1 tsp (5 g) Cotija cheese (If you can’t find cotija- oddly, feta is a good alternative.)
1 tbs (15 g) homemade skinny cilantro lime ranch (or Bolthouse cilantro avocado in a pinch. Still great numbers and a solid bottled dressing.)

Lightened Up Creamy Cilantro Lime Ranch
1 packet of ranch dressing mix (1 oz)
1 cup light mayo (I used best foods only 1 gram fat per serving) I’m sure you could use greek yogurt if you feel better about that.
1 cup fat free milk (fairlife has lowest carbs) (add more if it’s too thick)
¼ cup salsa verde
1–2 jalapenos seeded (depending on how spicy you like it!)
2 clove garlic
1 whole lime juiced (about 2 tbs)
½ cup packed cilantro
Tiersa’s Salsa Recipe
2 – 14 oz cans fire roasted tomatoes
1 can yellow el pato
1 can diced green chilis
6 green onions chopped
3/4 bunch cilantro
1 tbs garlic salt
1/2 lime juice

Use a food processor if possible. Add green onions and cilantro and pulse until desired choppiness. Add remaining ingredients and pulse until desired consistency. ENJOY!
